Ladies and gentlemen, may I present the Handkäs…
Handkäse – literally “hand cheese”, traditionally formed by hand – is a sour milk cheese – a cheese that has been curdled by natural souring or by the addition of lactic acid bacteria.
Around here, it’s served as Handkäs mit Musik in a vinaigrette dressing, topped with onions (slightly vulgar, but that’s where the ‘music” comes from….) and caraway seeds.
Eating one of these with a glass of eminently drinkable local Silvaner – nominally 200ml, but closer to 250ml – in the courtyard of the Potsdamerhof in Bodenheim is pretty good.
