I have an excellent recipe for a fresh pea soup, which I’m most happy to share if you’d care to send your address on the back of a €100 (or equivalent) note.
But what makes it are the fresh herbs that get sprinkled on top with a swirl of creme fraiche.
Lemon balm, oregano, mint, salad burnett, parley, chervil, thyme, rue and estragon.
I’ll pass, given my dislike for pea soup!
